Apple Poppyseed Coleslaw
Ingredients
- 2 cups chopped green cabbage
- 1½ cups chopped red cabbage
- ½ cup grated carrots
- 2 Tbsp. mayonnaise
- 3 Tbsp. olive oil
- 1 Tbsp. apple cider vinegar
- Juice from 1 lemon
- 1 Tbsp. poppy seeds
- 1 tsp. ground black pepper
- Salt to taste
- 1 diced Granny Smith apple
Directions

In a large bowl, combine cabbage, carrot and apple.

In another bowl, whisk together mayonnaise, olive oil, vinegar, lemon juice, poppy seeds, salt and pepper.

Pour dressing over cabbage mixture and stir until well combined.

Cover and refrigerate for at least one hour.

Serve cold.
